Each glass of the oxidative white wine rests for more than six years beneath a fragile veil of native yeast. The barrels are never topped up, leaving time, oxygen, and nature to slowly shape the Savagnin into something unmistakable. Even then, the story is unfinished. The bottles continue to evolve for years, often decades.
